Biryani is a famous dish from India that's well known for its spicy taste and aroma.
1 kg basmati rice
1 kg mutton or chicken, cut into pieces
1 onion, sliced
2 tomatoes, chopped
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1/2 teaspoon homemade biryani masala
1/2 teaspoon biryani masala powder
1/4 cup coriander leaves, chopped
1/4 cup mint leaves, chopped
2 tablespoons ghee
2 bay leaf
3 cloves
2 cardamom
Salt to taste
Dry roast
Roast the spices
Wash the rice and soak it in water for at least 30 minutes.
Heat the ghee in a large pot or pressure cooker over medium heat. Add the bay leaf, cloves, cardamom pod, and cinnamon stick and cook for a few seconds.
Add the onion and cook until softened.
Add the ginger-garlic paste and cook for a minute.
Add the turmeric powder, red chili powder, garam masala powder, and biryani masala powder and mix well.
Add the mutton or chicken and cook until browned on all sides.
Add the tomatoes and cook until they are soft and mushy.
Add the soaked rice, salt, and enough water to cover the rice by about an inch.
Bring the mixture to a boil, then reduce the heat to low and cover the pot.
Cook the rice in a vessel until it is ready.
If your cooking with pressure cooker, cook for 10–12 minutes on high pressure.
You can move the vessel from the burner to the table once the rice is cooked.
Fluff the rice with a fork and serve hot, season it with coriander leaves and mint leaves.
